HOW TO BREATHE > CENTENARY COUNTRY CLUB > we the best

Posted by: DINAH AGULAR Jun 8 2018, 07:20 PM
Dinah hustled super hard all the time with their business and sometimes it paid off in big ways, like sometimes she got them gigs. Like this baby shower at a swanky country club. Dinah had only been here a handful of times and it was usually as someone's plus one, she never got to go into the kitchen. God it was a gorgeous kitchen. "I love it in here." she asked as she helped one of the people they had hired carry in a tray and placed it down on a counter. They had done most of the prep at home but they had gotten here early on purpose to make the rest of the food. "Molly I miss working in kitchens like this." She didn't necessarily miss the restaurant business and those late nights but she missed this.

DInah was an amazing business partner. Molly was great with numbers and keeping the paper part running, and she did good cooking, too, but Dinah was the genius who had the real vision and made things happen. She definitely didn't appreciate the kitchen the way Dinah did. It was awesome, but this was not really her passion the same way it was her roommate's. "Does that mean you're gonna start pushing for a real restaurant?" she asked with a grin.

"Pushing harder maybe." she said with a smile, running her hands over the stainless steel counter top. She didn't push it at all, she wasn't completely sure that it was a good idea, but she loved the idea of it. That was the end game for her, for sure, having a brick and mortar restaurant, not one on wheels.

"If we had a real restaurant, we could do so much more than burgers, too." The menu on the truck was limited for a reason, in a real building, they could expand the menu and do a lot more. Molly was happy with the truck, but it wasn't like they hadn't tossed this idea around more than once before. Not pushing anything, but talking about it was fun sometimes.

She had desperately needed the move from LA and the truck to get her shit together. She was so busy and she probably couldn't run a blog like she was if she was also running a restaurant but she could hope. "I know right? We could do so much stuff." Every once in a while Dinah added something to the menu for the week, something that wasn't a burger, but it wasn't the same.

They'd both needed the truck in their own ways, but it might be time to expand. It was always a fun conversation to have, but making it a reality had never seemed like a good idea before. Maybe now was the time to start really exploring that. "And I always love when we do menu testing," she joked. Dinah cooking a ton of different food for them to try? She was always good for that.

Dinah hadn't gone to culinary school to work in a truck forever. She had plans for herself, big plans, and she had fucked them all up in her early twenties but she could get back on track in her thirties. "I know you do! I love it too. Hey, you should come next time. I'll invite you." she said to one of the people they had hired, she was always networking.

They could start planning at least. Maybe they weren't totally ready for a real restaurant space yet, but they could start inspiring themselves. "We should just do it, no matter what. Start planning menus and have some fun with it."
